1) Because even people who have done all the things you mention have bad and conflicting opinions on music with each other.
2) Because qualifying an album as shit or not could have nothing to do with music theory (but it should with knowledge of the context of the music from that era)
3) Playing an instrument doesn't make you evaluate creative expression better than anyone else
