Ignoring the obvious choices of Samurai Champloo, Berserk, Kaiji, Akira etc, one of my favourites is the OST for Air Gear. It'sa made by the same guy who did the music for Jet Set Radio and Jet Set Radio Future and sounds exactly like them.

There is also a fully orchestrated version of Jesus that was used as the ending music for The End of Evangelion but only for the domestical episode release in Japan (Genesis: 14). Couldn't find it on yt but I think it's on one of the S2 Works discs.
The film version of EoE doesn't have any ending theme, it ends abruptly after One More Final and the only credits are Thanatos -if I can't be yours- for episode 25: Air.

OST 1 has all the hits.
OST 2 has some of the best BGM in the series, like:
