Because it has their best songwriting. Contrarians will name Surfer Rosa because Steve Albini produced it, but that album is pretty forgettable for the most part.

Come On Pilgrim deserves SOME mention
I don't think any of the classic albums are clearly better than the others, but Bossanova just about edges it for me, because of the surf influence and the atmosphere in general.
Trompe Le Monde is my favorite. It's like an album full of Tame, which is my favorite song off Doolittle
