killer7's OST had a shitload of music that was enjoyable outside of the game, it was a 2 disc soundtrack too.
Final Fantasy XIV has a great one too, even if you're not in to MMOs, listen to either Before Meteor or A Realm Reborn, both versions of the game had great music.

Its just kind of taken for granted that Uematsu is lord. FFIV, VII and VIII had some of the greatest music ever written for games.
Medieval II: total war also had an excellent OST.
Rainbow 6 too, because I'm a sucker for that film-trailer epic orchestra + electronic feel.

One of the most underrated soundtrack's to an extremely underrated DS game. The atmosphere this music captures was amazing. And there was plenty of variety to be found. I sometimes would leave the game running just to listen to its music. It's hard to choose specific songs (but I did so anyway), so check out the playlist if you have the time. The world themes (Celestial Archives, Vesper Defense Outpost, Arcterra, Alinos) are where a lot of the best tunes are found.

Another gorgeous game with an underappreciated soundtrack. Yoshi Touch & Go. The 3rd DS game I bought (first two being Ridge Racer DS and Super Mario 64 DS, well and the Metroid Prime Hunters First Hunt demo that was packed into every old DS Phat back in the day, which I unfortunately lost several years ago). YT&G didn't have many features, just a couple of modes that you played to get a high score, not specific levels like a Yoshi Island game, but its artstyle and soundtrack were amazing.

Remains one of my favorite videogame soundtracks of all time. Definitely in the top 3. Animal Crossing Wild World. It had a different song for each hour (like most AC games). I remember loving to boot it up when I was up really early or really late to hear a song I hadn't heard before (or rarely heard). And K. K. Slider always brought his jams to the coffee shop every Saturday night at 8am. I often went to his shows to get the free bootleg copies he would give out. Heh.
I forgot what it's called, but there's a Chrome extension out that plays the respective Animal Crossing tune depending on what hour it is. I ought to find it and use it again.

There we go; I got the game off eBay recently, and the OST was just one more memorable thing about it.
Shame the game didn't last longer, though. I feel like they could've crammed a lot more into a third disc for the GC or a second disc for the PS2, or even a full-blown sequel, since there was so much of the plot left for the supplemental materials to explain.
