Song Exploder is pretty cool. They invite various musicians (notably the Microphones, Julia Holter and Open Mike Eagle) to take apart their songs and tell about how they were made.
Open Mike Eagle's own podcast Secret Skin is worth checking out too.

You probably haven't heard of him, but this guy Anthony Fantano runs a vlog called the Needle Drop that's sorta what you're talking about. He's mostly just album reviews, but he does a good in-depth job of analyzing the product, just really great break down of the strengths and weaknesses. He also does these HILARIOUS skits with his brother Cal in the videos,
Something About The Beatles.
