If you want something a little odder try his movie soundtracks like Uncle Meat, or if you want something a little more palatable and easy some of his late 70s stuff like Sheik Yabouti is great to, and has a little more of sarcastic humor.
I'm also a fan of his live stuff, there's a great energy and atmosphere to them. If you like live stuff check out either Fillmore East 1971, or Roxy and Elsewhere

Roxy & Elsewhere
Apostrophe (')
Hot Rats is sweet, but everything he did is fantastic depending upon your mood. He was the king of versatility.
Hot Rats is an amazing instrumental album
Sheik Yerbouti is a classic but i personally think that it gets boring towards the end but that being said the tracks at the beginning are top notch
Apostrophe is great all the way through
