It's pretty good when done tastefully (a lot of stones songs come to mind) but most generic blues is complete garbage. I'd even argue that a lot of bands who ripped off the greats made the music sound 10x better.

You can know many music theory without knowing how to put it in words. Is like knowing that you need chocolate and sugar to make a chocolet cake but you don't know that the name of the chocolate is chocolate or that the name of the sugar is sugar. You can use both condiments and prepare the perfect cake.

Wrong depending on who you're talking about and irrelevant for the blues players who didn't have music theory. You don't need music theory to make good music and there's far worse scenes you could be waving your fists at if you have a problem with people with little theory.

If you're not into much bar western art music, it's understandable that you'd start thinking that a strong background in theory is necessary.
In the context of folk and pop, it's useful but not 100% necessary.
Most of my favourite works came from people with a strong background in theory that they used to enhance their work but there's a lot to be said for work that is created by blindly stumbling around till a composition sounds interesting and working purely on instinct. You can get really fantastic results out of that and it can be freeing in certain circumstances to be more concerned with other aspects of the music unrelated to it's harmonic or melodic structure. People like Brian Eno are good examples of how that approach to composing can be very good.
Thing is, there's a much larger and more impressive body of work that comes from building on and using past ideas and conventions. Even if that's only being done in a rudimentary way.
