Easy, you just listen for the chord it 'wants' to resolve to. And if some of the other chords don't fit the key of that chord, you're in a mode.
I like the key between E minor and Eb minor that so many guitar songs are in because they've not bothered to use a tuner before recording

The whole point of equal temperament is that you can play in any key and it wont sound too strained if its too far around the circle of fifths from Cmaj/Amin.
The only place you'll notice the different timbres of different keys in in orchestral music, where different keys mean certain notes are easier to play, or make use of open strings more in the string sections, and a good orchestra can negate these factors and play the same in any key.

The joke is that atonal pieces don't have any sharps or flats at the start to show what key they are in. Cmaj and Amin also don't have any because they are both just white keys.
