What are some artists whose discographies start off as relatively normal pop, and gradually go down the rabbit hole of extreme experimentation?
The bigger the contrast between their earlier and later stuff, the better.
Most artists do the opposite. Start experimental, and then sell out and become more pop oriented.
The only artists I can think of who apply to this rule are The Beatles and Scott Walker.

There's a definite disconnect between the psychedelic mindset/experience and psychedelic music, it's mostly just the association with that older style of rock aesthetics that makes the genre. I don't think that makes it any less psychedelic or enjoyable though. Trying to encapsulate the experience itself is sort of pointless since it's so subjective what will give a person that feeling, so instead we can just jam out to whatever music associates itself with that idea. My favorite album is Not Available for obvious reasons. Eskimo and Mark of the Mole are also incredible and really underrated. Fingerprince is another album I really enjoy but have never seen discussed here.
