Alot of ambient is very minimal, but that doesn't mean it's not inspired. artists like Stars Of The Lid had a very distinctive and creative sound, and their music is just divinely beautiful at times. there is ALOT of charm in minimalism, i think you should give it another chance...
But aniway, if you want ambient that has more "things" going in it though, try:

All their albums up until Monster are pretty great. R.E.M.'s 80s albums are highly recommended. Automatic For The People is their best 90s album though. The rest isn't too amazing. My personal favorite album is Reckoning but I'd start with Chronic Town or Murmur and go album to album throughout their discography.
