No, they're referring to the sun. The Princess is coincidentally named after it but is no god/goddess. She keeps their planet spinning on it's axis, thus bringing day and night. (Luna aids in this task).
Princess Celestia is a high priest of a sort and the 'Summer Set Celebration' is a religious tradition where she raises the sun so that ponies can worship it.
