You know, I think she'd actually be alright with it. Celestia strikes me as a pony who is used to working in the background and enjoys seeing others come into their own roles. She wouldn't feel the need to be the center of attention because she's going to be around for a long time, but there are innumerable other ponies out there with meaningful stories to be told.
Doesn't mean it hurts us any less to see this happen to her, but I think she'd understand.

Celestia seems like a pony selfless enough that if she wanted a child with you she'd insist you continue to enjoy your own life after the child reaches a mature enough age. She'd love you for the happy memories but wouldn't want you to hang around for duty's sake.
