I think it's generally agreed upon, that Applejack has the worst episodes.
But the thing is, do you think you could do any better? She's not an easy character to write for, she already has her lifelong dream accomplished.

People who say that either just don't like AJ or have an incredibly simple idea of what makes a "good episode". I can appreciate most of her family episodes just fine. That's what works well for her, if everyone's believably well-written, and she doesn't need dramatic arcs to be good, and the absence of them certainly doesn't make the episodes bad. To say RD and Rarity episodes are the best just because they have goals, while ignoring everything else that makes an episode good is silly.

Applejack episodes for the most part dont work without being co-hosted or her simply being a main supporting role because she's a much better straight man than an eccentric personality. She has her shit, like everyone else, but she is much much more grounded in all aspects compared to the other mane girls.
Honestly, I don't like Applejack episodes, but when Applejack are in other characters' episodes, I'm always excited.

This is one of the dumbest argument I've ever heard. Every mane character relies on the support to pull them through. Even such episodes like Party of One only work because the entire cast is there for Pinkie to feed off of as well as react to her growing erratic antics. 20 minutes of Pinkie in Sugercube Corner mumbling to herself would have gotten old fast.

Nothing really falls flat. While there are mistakes like with other characters, half of the feelings are a matter of perception on the viewer's part.
AJ has conflicts in her episodes like the others but there's a bit of a double standard by many on how they're view. Too many don't look past "the voice of reason" to see what she's really capable of feeling and doing. An example: many were turned off by her actions in Somepony Watching Over Me and write it off as a bad episode for that alone, but AJ's reaction was reasonable for her with her family history and having just witness an accident of someone in her charge since early age. With AJ's parent/big sis nature she did this before with Applebloom as early as ep.9.Twilight has arguably a more extreme reaction to a problem in Lesson Zero. But turning villain and causing chaos in a town over a late letter is not seen as an OOC overreaction. So we see both characters are capable of of stretching beyond their comfort zones to do the unexpected; when Applejack does it, more in the fandom react unfavorably though she's having challenges like the others.
