Starlight, on the other hand, had a far more interesting philosophy: it could be seen as pseudo-communism, or it could be seen as general critique of overly-optimistic reality-denying philosophical thinkinglike religion. Go ahead and tip your fedoras. Or, yes, indeed a possibly a criticism of SJW culture taking "equality" to extremes. Either way, she was unique in comparison to other villains. After Sombra, Tirek and Adagio, the generic "big bad powerful evil villain", it was refreshing to see a more low-down, more direct challenge to the Mane 6's beliefs. They couldn't solve the issue through more rainbow lazers, so they had to use their wit instead. The character of Starlight was also great, with a clear devotion to her belief, and a sort-of genuine happiness to her, despite her cruel actions.
She got even better in the S5 finale when she went full-blown crazy with her desire for revenge, and how she used friendship against Twilight to stop the bullies. True, her motives were very weak, and her redemption was a little too happy rainbow sunshine, but at least it wasn't nearly was whip-lash-inducing as Sunset's heel-turn redemption on EQG1.

Sunset wants power, which means she might feel powerless. Perhaps a lack of control in her own life.
Perhaps the reason she wanted power was because she looked up to Celestia and thought the only way to be respected and to have a lot of friends was to acquire power.
Or maybe she witnessed other fillies being bullied as a child and decided to become the bully rather than to be bulled.

I'd argue the opposite. Both of them went from "I am going to destroy everything you hold dear!" to "I'm sorry" in the same amount of time, but where Sunset actually had to work for her redemption over the course of an entire movie, Starlight was just instantly forgiven in the last five minutes of the season finale. We really need an episode expanding on Starlight going back to her village and working for it.
Meanwhile, a major part of Sunset's appeal is how she has arguably the best redemption story in MLP. We see her go from an -admittedly mediocre- villain in the first, to former villain struggling with the consequences of her actions in the second to redeemed protagonist in the third. It's a really good trilogy.
Though it does make me wonder where they're going to take Sunset in the fourth movie.

I agree that everybody forgave Starlight too quickly, but I think that's just because the writers probably didn't want to repeat the who "social pariah" plot they used for Sunset, so it became more about Starlight interacting with individuals like Sunburst and Trixie, rather than groups like the CHS students, and how it's more about how she's beating herself up over it rather than with Sunset where everyone else is beating her up over it. Unfortunately, Sunset's social pariah plot is WAY more interesting than Starlight's guilt complex, but the writers can't afford to repeat themselves (and how Starlight keeps talking about HOW EVIL SHE WAS!!!! is getting annoying by now. I hope the writers stop that shit in part 2 of S6).

Well we saw what happened to Twilight and "holy crap where's my magic!" so it's safe to say that Sunset went through something similar. While she'd be used to doing things the hard way as Equestria does not have a high level of automatization,I think that things like uncontrollable weather or self-changing seasons would have left her flabbergasted.
As for religion, the concept of worship in and of itself exists in Equestria. Celestia is worshipped as a deity in all but name by the ponies. And even by name in certain ways, given how "Sweet Celestia!" is pretty much their version of "Oh my god!" I think she'd be more surprised by the notion of people worshipping a god that never shows himself.
