I kind of saw it as Rarity knew what needed to be done in order to get the restaurant the 3 hoof rating, so she set out to do exactly that because otherwise the restaurant would fail. At that point she wasn't thinking so much about keeping their "Indian" originality intact, more that she had found her friendship mission and she just wanted to succeed, which seems pretty in character to me. Eventually she did realize that she had been going about things in the wrong way, which is very similar to how the other Map-Quest related episodes have been.
