She probably would have been at first confused why she is being bullied in the first place, since she obviously doesn't understand ponies at all, she would try her best to fix it, since Maud doesn't seem that kind of pony to want to resolt to violence, in "Gift of Maud Pie" she tried to return the thing to that pony nicely, even saying "please".
Yet, as would the bullying persists on, she would eventually have mental breakdown, then she'd start beating them up.

She's not stupid. She understands ponies just like anyone else, she's just different. If anything, her emotionless demeanor would cause the bullies to have a mental breakdown, because they wouldn't be used to the absence of a reaction that only Maud could provide.
And even if she wasn't as physically strong then, if it did come to violence, I bet she'd still be able to hold her own against an angry and freaked out bully. She isn't stupid, but to say she understands ponies is something I don't believe, the only pony Maud understands is Pinkie and probably her sisters.
Realistically, bullies wouldn't be scared of someone who'd have emotionless face all the time, she stands out and is kind of a weirdo, so she could potentionally be a target just for that.
We haven't seen a vulnerable side of Maud, yet, but she definetelly has one. Like everyone does.
