Really, there's no way to win in a fight against that many. The point is that we put hooves behind our words so we're not a pushover.
Use spells, fling mud with our horn to temporarily confuse, use flashes of light to blind. Fight dirty as possible. If we can even land a good few hits in, we've done enough.
