Just keep in mind that the mane bisects the scalp. I like to imagine it "growing' from the middle of the head and that it has weight to it. It takes some practice obviously. Personally I like to begin shooting the hair from the "pole" of the scalp (usually right behind where the horn goes) and work my way around the back to the withers. I tend to draw Rarity and Fluttershy a lot when practicing manes because I can give their manes the most volume and it's fun.

Kind of an example but here I actually started with the shape of the mane and worked from there. Silhouette and shape of the mane is a good thing to keep in mind because it will help the viewer recognize the character at a glance. Fluttershy and Rarity have very, very strong silhouettes in a 3/4 view of their profile so I tend to draw their manes a lot.
Keep in mind I'm far from perfect and am always experimenting.I'm sure sempai will yell at me later.

If you try to draw something realistically, like a horse or stuff, drawing it from memory will only consolidate mistakes in anatomy unless you've already had a ton of practice with reference. But if you draw some abstract shapes or characters with no need for reference, you'll practice shading at the very least. Drawing is always better than not drawing but I would avoid trying to draw realistically without a reference.
