Actually, the more magic a unicorn's got and the less it's actively using, the more mentally unstable it becomes.
A unicorn's got to use it's magic to discharge stress. The more power you got, the more you got to discharge.
Celestia's got enough power to pull the Sun around during the whole day, meaning she's using a shitton of power at all times.
That explains why she's so calm and collected.
It also explains why was she so weak at Canterlot Wedding. She can't just stop the sun and focus on fighting a villain, the whole world would've noticed.
Then she sleeps during her inactivity period so her madness doesn't much chances to be triggered.
However, Luna's not so lucky since she's also seen awake during the day tons of times and that's how it all piled on her until she desperately wanted to raise the moon to make herself feel better and was undeer so much stress that she felt like she would need an eternity of night to discharge it.

Magic is essentially power.
The power of magic corrupts the mind.
Discharge helps as it reduces the magic about.
However magic of a unicorn refuels none the less so this has to be done regularly.
This makes sense with Trixie, as she really doesn't do too much with the magic she has. She was in Celestia's school for gifted unicorns implying skill of using magic or large amounts of it probably the second due to her routines being rather simple usage of magic. Since her arsenal is quite small its most probable that she really can't effectively discharge her magic. The magic starts causing mental problems, probably more in this case as speaking in the third person is a bit off and could be a byproduct of this.
Thanks for the expansion, its rather well thought out and I like it quite a bit.

Hold on, but there's another theory that I had a while back that can also explain why unicorns and alicorns sometimes don't use their magic in situations when it would clearly solve everything.
The thing is, I think that magic is something that can build up inside a pony, and that it can manifest itself as a very (relatively) cool plasma-type material, as seen when when unicorns and alicorns use their horns. This means that magic can be transferred to someone/somepony else (as seen it Twilight's Kingdom when Celestia, Luna, and Cadance all transfer their magic to Twilight to evade Tirek), as well as stolen (as seen when Tirek was forcefully taking the magic from all of the ponies in Equestria in the aforementioned episode). Although, if magic really does manifest itself as a plasma, that would mean that it would raise the body temperature of any creature that has a shit ton of it, as plasma is still pretty hot stuff. In which case, this brings into question how Unicorns and Alicorns are able to channel magic for use.
I imagine that there are special nerves that connect to the unicorn's/alicorn's brain which allow it to channel magic through the horn, but this comes at a price. Since plasma is still fairly hot, using magic too much for too long can cause the nerves in the horn that help channel magic from the brain to be fried, little by little, which would cause a ever intensifying pain that starts out five times worse than any migrane headache. The only way to make this pain go away once it starts building up is to douse the horn in slightly cold water.
So basically, going on what you said, Unicorns and Alicorns have to find an equilibrium of magic use on a regular basis so that they don't go insane or fry a very important part of their nervous system.
