So, now that the session is over, I kinda want to do some character development for Panini. I feel like Rose and the other mares have more development than the main character of the story.
So, any background ideas? I don't want to write your guy's character for you.

So, before I start implementing some more story aspects I want to ask where you want to see this story go.
Do you want to stick with the more Slice of Life feel, or should I start introducing some of the adventure themes that I had planned? Any other themes you might want to see?

Slice of life is always a good start but this place is obviously more meant for some adventure. Brimming with danger and exotic animal and plant life, patrolled by massive mares. Sounds like adventure setting to me. Just try not to make it too busy. However, maybe you plan on taking a page from that Dragon's Crown game (after every dungeon they prepare meals from what they found like harpy egg omelets, fried kraken tentacles, etc, Some of that stuff was downright food porn.) and have food preparation and cooking while out on adventure be a big thing, that way it would make more sense for an aspiring cook to hang around dangerous places. All that exotic food possibility.
