Well, according to mythology, the arimaspi were a race at odds with griffons, so I'm fairly certain they decided to make them a species as opposed to a single creature. It also occupies its own area on the castle map -- the mountainous region with the skull.

The Arimaspi were a tribe of cyclopes, so I just kind of figured "cyclops" was the race and Arimaspi on the map was a fuckup. I guess they could've done as you said, though.

They'll probably even bring it up in the dialogue with AJ being all "Y'all sure you can handle it on your own?" and Twi being like "Psh, we've helped loads of times" and AJ all "but I was there to help, I don't want to go relaxing in case you gals need anything" and Twi just reassures her they'll be fine.

My point is that writers only include story elements that are relevant. This is true of everything. They're not just going to write some minor detail as a throwaway, only to be forced into a corner later on.
