Soarins could be in his 40's too, his job is closer to the equivalent of being an aerobatic pilot rather than a high.performance athlete (we also don't know how well he performs in relations to his peers or their ages), and Night light looking younger than him could be simply because he's a darker shade of blue which would hide most "imperfections" from aging, the same way wrinkles are a bit less noticable on black people or how black clothes can make you look slimmer and younger.
It could also be possible that unicorns don't live long enoug to present such deteriorated bodies, after all, all that zip-zapping and titty sprinkles must take it's toll on their metabolism. The lack of physical labor thanks to their regular occupations, living spaces and costumes in general (twilight teleporting instead of walking for example) could also be a strong factor in keeping them young in appearance despite their real age.

Dunno. I assume there's a pretty narrow window between being experienced enough to be qualified for the position and being too old to have the sharpness of mind needed to fly ten yards away from another plane at 1000 mph, so it would be quite surprising if the SD were more than about 3.
It just seems more likely that the bags under Soarin's eyes are from staying up late plowing fangirls than from being old as balls.
soarin just has old-looking eyes. it doesn't prove that he's old.

I think it's just that the show's art style doesn't really allow for subtle indicators of aging. Once a pony is fully-grown, you have to rely on context clues to determine how old they are relative to other ponies until they're Granny Smith-aged.
