Just look at all the other dragons and then look at him. He looks like he's kind of furry, his horns are damn near hair with multiple colors. He's even shaded differently from everything else on the show. Also I think his mouth syncs better with his dialogue than other characters.

No, they're actually pretty "dumb" on most accounts.
Tons of accounts of them hurting themselves or getting themselves killed over mundane shit or ridiculous situations (get stuck in a shrubbery, could easily back out but instead kept trying to go further, died of the blood loss).

Really depends on the horse. Most are just kind of average. Stand around eating, alert if a loud noise is heard, spooked if it's sudden and close.
The variance come from the fact that for whatever reason, some horses just get spooked at really random things. I knew one horse that would freak out every time it saw a cow.
On the contrary, some are pretty sharp. We had one horse that we weren't using that much, so we lent him to a neighbour for a bit. Overnight, the horse had broken out of his stall, out of the barn, and walked a couple kilometres back to our house. He was just chilling on our lawn in the morning. So we just said "Fuck it, you can stay if you want to that much".
So like I said, it varies incredibly greatly, and it's important you know just what stresses each individual horse when you work with it.

Also it just has a god tier cast of characters which helps a lot.
Besides Joseph and Stroheim everyone else except the Pillar Men were really mediocre. Even Caesar.
