I personally have loved how Twilicorn has worked out in the show. I love how the universe keeps moving forward. It's more exciting than doing the obvious and making her an alicorn in the series finale. Making her an alicorn now let's us see how she actually does as a princess and how life changes, compared to just being to left to wonder after a series finale.

Magical Mystery Cure was not a good episode. It was not a good idea to make her an Alicorn while keeping the show running, at least not with only a rushed one-parter and a pretty shitty justification, and I would have preferred if they didn't, however I do also think that they have handled Twilicorn pretty well and that it gave them the opportunity for new character development.
The show staff had no control over it, but what they did with it is pretty good.

It gives the show a way of telling a bigger story. Otherwise we would have the mane6 solving yet another problem in ponyville and everyone would wonder why Celestia isn't taking on the big baddies.
When Twilight became a princess I knew the pacing would be right, she got the castle and right now the ponies are on their mission to bring the magic of friendship to whole Equestria. I especially liked the episodes where everypony had to do things they hate to pursue their element of harmoy, like Raimbow Dash deciding to not join the Wondercolts to win the qualification or Fluttershy deciding that being kind and friendly won't solve the problem.
The characters still stay true to the things that make them unique, their passions and their element, but evolve a lot in terms of how they act and behave. They take something from their lessons unlike Ash in Pokémon for example.
