Remember the episode with Philamena? Celestia was at Sugarcube Corner and was clearly uncomfortable with the way she was looked at (a superior figure who demands everyone's respect). I think that shows that Celestia is just a pony. She's a Princess, but she would like to be treated as a peer rather than a ruler. She even says this to Twilight when she became Twilicorn, that she no longer wants Twi to call her Princess, because the two are now on the same level, and are to be considered friends. Then, at Slice of Life, we see Luna and Celestia acting like sisters. They have the same dilemmas we do, they act the same way we do, but they're older and experienced....yet deep down would prefer to be seen a a friend rather than princess.

She probably feels obligated to retain some of the hype that Equestria's put on her to help retain their confidence in her leadership, but at the end of the day she's just as fallible as anyone else.. (Even in straight-up combat, evidently enough.) I'd imagine she just amuses herself with subtle, light hearted mischief at home, and probably reads, and attends operas/sporting events/etc. for recreational fun.
