I think her character development is pretty interesting. From a constantly overreacting asocial shut-in bookworm to a calmer, more reasonable bookworm having found happiness in friendship while still keeping the traits of her old self, but less pronounced (She still freaks out and is a control freak and still has to learn about friendship or that the scientific method doesn't always work on friendship issues).
Yes, her personality is different, but it is an evolution of her character. She's still Twilight.
I think it's pretty great that a kid's show actually does meaningful character development for it's main characters, where they actually learn from their lessons (mostly) and evolve with time. I don't think you see that very often.
I like all Twilights equally well. Constantly sarcastic and clueless Twilight was great, but calm and collected, yet still calculating and excitable Twilight is great too (and Twilight in denial about her feelings in What about Discord was amazing too, we didn't have that before at all, except maybe Feeling Pinkie Keen).

Feeling Pinkie Keen is a questionable episode, mostly for its moral, which is why a lot of people seem to dislike it. However I always have a weakness for this episode. All of the characters were a lot of fun and I like the slapstick humor of it.

To add to what I wrote in >>25515856 (and respond to your second post), one thing I do miss a bit about Twilight is the sarcasm. It kind of simply ebbed off after a while, not really being used anymore. While it can also be explained through character development, I feel that they should use it more often since it's not really something you'd simply lose. However I've had a lot of fun seeing how Applejack has sort of soaked up Twilight's sarcasm: Whereas living with friends seems to have reduced Twilight's sarcasm, it also seems to have increased Applejack's.
Also worth noting for this and the rest I mentioned is that all these developments have been taking place gradually over all seasons. Twilicorn shitposters like to imply that Twilight's character changed radically with MMC, but that isn't really true. MMC did add the "I'm a princess, what do I do?" trait to her character, but beyond that, many of the aforementioned changes had already started. I think a part of why this is such an issue is that S4 barely ever focused on Twilight outside of two-parters, which are hardly useful for character development.

Slapstick is another of those things that the show has used less with time, but I don't think that's necessarily bad. It can be fun, but it shouldn't be overdone and I think I prefer how the show handles humor nowadays. However that's a matter of personal preference.

I think that's just the problem with the moral being badly worded, as it can be seen as "You should stop trying", whereas it should be "Just because something can't be explained right now with current knowledge, doesn't mean it will never be explained or isn't true". The latter is pretty much what the episode showed, but the letter implies the former, which is the problem. If they had found a better way to word it, I'm sure it would have been received better.
