Personally, if I had to list a few things I like about her...
She's a confident, tomboyish, exciting mare, who you could do plenty of fun things with, whether it'd be something like sports due to her athletic affinity, or pranking, or even something more relaxed like watching a movie or the sunset. There'd always be plenty to do, and it'd never get boring. She's also very social, of course, which is a big plus, I'd say.
But on top of that, I do still believe that she has a softer, sweeter side that she'd only show in private with her lover. To what extent exactly is debatable, or perhaps just relegated to headcanon, given that we don't see the characters in situations like that in the show. That doesn't mean that I think she'd totally drop her confidence or brashness in private, I just think she'd be softer and maybe more open to some sappy stuff.
That's only just a brief summary. I see so many great things in her.
I do take issues with these arguments about characterization though. I'm sure everyone could afford to consider each others points, but it's just such a headache and nobody is gonna change their opinion over it.
