I'm starting college this fall and I'm wondering what language I should pick to fulfill my school's language requirement. I'm leaning towards either Russian or French. I'm already fluent in Spanish (and English, obviously). What language do you think has the best literature?

There are good literature in portuguese and spanish too. You should consider it.

If you're fluent in one then there is no need to learn the other, unless you're a genius, then by all means, learn portuguese.
Portuguese is probably one of the best languages to write in and has a rather underrated literature too. Its really rich. But I believe most of the good stuff is translated already.
Try to find something translated from Machado de Assis! See if you like it, if you do, then consider it.
Between Russian and French... I'd pick french. Personal preference. It is also literally a pussy magnet, everything sounds better in french for some reason. I believe that most of the russian work is already translated to english, too...
