plot is just one element of literature/fiction. you also have language, character, symbolism, setting, theme. you combine these elements in varying permutations and then you have a book.
so it's possible to have a book driven entirely by one character's thoughts, but nothing "happens" over the course of the story. this is what beckett is doing as >>8204524 and >>8204439 point out.

Or another example, nothing really "happens" in Ulysses. There's a story, but if you look at just the story, it's pretty boring. Dude whose wife is cheating on him wanders around Dublin all day, feeling varying emotions, as one does each day, meets this kid, they sort of make each other feel better but not really, then he goes to sleep.
