You don't see many novellas published anymore. That Art of the Novella series is trying to bring the form to mainstream attention, but I honestly think the reading public at large is as dismissive as you are of the format. Some of the most beautiful works I can think of (Henry James' stories, Mansfield's, Flaubert's, Melville's, not to mention a plethora of Latin American lit) expected the reader to trudge through 50-90 pages of concentrated craft.
One of my favourite books is Nabokov's The Gift (Dar), and it could be argued that each of the chapters (~70 pages each) could be read as a novella (certainly Ch. 4, which is the monograph of Gogol's life which he later expanded into a biography).

I've recently been rereading Gaddis' work (thanks to /lit/ for sparking my interest in him again), and I have to say CG is miles ahead of The Recognitions; and yet, JR is still one of the most sublime works I've ever read. Like, fuck: remember the first time you read Moby Dick? Proust? Thoreau's journal entries? You could feel the text in your blood, like it was something wholly familiar yet unexpected and eye-opening.
But yeah. People who complain that a short text is indicative of a minor work need to read more Borges, Kafka, Hernández, Rulfo, Melville, Flaubert.

Kafka believed the composition of a single work should be continuous and unrelenting ("The Judgment"). Kerouac wrote On the Road as one long sentence/paragraph synthesis. Nabokov wrote Invitation to a Beheading during a sustained inspiration of 2 weeks (and it shows: honestly, it's great; but it could've done with some fine-tuning).
