While I did indeed love them when I first read them years ago, why is it that the ASOIAF books had such a huge fanbase while hundreds of copies just sit on the shelf?

I think that the fact that they are not finished yet drives readers to speculate and to try to compare notes with other readers. That's why they are so assertive when suggesting others read them.
Many people who don't normally read got into the series because of the TV show.

Yes, it was all peer-to-peer. When someone asked for more gritty fantasy like the Black Company, they were recommended ASoIaF.

From a nosey glance at /sffg/, I've presumed it's pirated quite a bit. I've seen some screenshots of hard drive with a folder for the series.

Usually there is a positive correlation between sales and pirated copies. As, if people want to read it, they will buy it, pirate it or borrow it. I'm guessing it is also loaned out quite often at libraries.
