The classic is The Logic of Scientific Discovery. Also check out http://worthylab.tamu.edu/courses_files/popper_conjecturesandrefutations.pdf
I'd also read some Hempel, Carnap, Wesley Salmon, and maybe Kuhn, Lakatos, Quine, Goodman.
