Dhammapada and the Pali Canon. The Analects can also be quite insightful at times.

I would recommend something like Buddhism as Philosophy by Mark Siderits. It helps unpack some of the various philosophies of Buddhism from the more religious stuff. It should provide an okay introduction to eastern philosophy.
