That's not exactly true. He'd planned the series as a trilogy, but the plot of those three books was supposed to be similar to the plot of the seven books we're getting. The first book of the trilogy was getting far too long, so he turned it into the first three books of the series (that was before he even published a single volume). The second of the planned trilogy became books 4-5 plus the start of book 6. The rest of book 6 and book 7 are going to cover the third book.
I feel sorry for the people who got onto the ASOIAF hype train from the TV series, not knowing what Martin's writing habits were like beforehand, it's quite adorable yet funny at the same time. Those poor, poor fools.

The actual history is a bit more complicated (at one point he wanted to have a gap of a few years after the first three books, then a second trilogy, but found that it didn't work, scrapped it and had to replot the middle of the series).
