because most of it is not quality? there are exceptions to the rule, but most of it is simply not good writing. this is true of a lot of genre fiction, but true of fantasy perhaps most of all (maybe only above romance or some shit). in addition to being poorly written, they also use the same tropes over and over and over again, and are surface deep.
if you read shit other than fantasy, you would know why fantasy isn't considered quality literature.

There are plenty of fantasy authors like Tolkein, Le Guin and Gene Wolfe, who, because they're very learned people, take inspiration from a whole source of classic literature including favourites of the fantasy genre (and by fantasy genre I mean you go to the bookstore and it's in the fantasy section, not lol The Odyssey has monsters and shit so it counts as fantasy), so they don't get trapped too terribly in the same fantasy cliches like lesser authors do. Plus they're just pretty good writers on a technical level.

The best way I can explain it is this: there's nothing wrong with fantasy in itself and nothing stops the genre to be considered literature. However the good fantasy books are extremely overwhelmed by the mediocre or bad ones.

It's basically just snobbery, and it's ultimately retarded snobbery, because ostensibly trivial genres very often carry repressed politics, beliefs, identities, status, and desires - because expressing them non-trivially is subject to enormous barriers to entry, faux pas, or worse. Dismissing all fantasy as low quality escapism basically demonstrates elitism and a lack of empathy, rather than some kind of - kek - politically subversive enlightenment.
Daily reminder that escapism implies a prison, and the people who criticise it are themselves power hungry and generally only upset because they resent being unable to easily control "the sheep" themselves.

Because there are barely any good authors. Most of fantasy is crap terrible authors copying from more successful writers. Fantasy only sells because it knows its target demographic. Fantasy is mostly written for a young audience, look at the tons of YA crap in the fantasy section of your lookal bookshop or any bestseller list. Originality has nearly completely vanished and most authors don't include concepts more complicated then moral absolutes. That's why fantasy is not recognized because it is mostly shit.
Literature tends to have depth.
Think over it.

Malazan is really awful. Every character talks exactly the same whether they're a 20 year old soldier, a 200 year old wizard, or a 200,000 year old god.
Most fantasy writers aren't very good. I'd still rather read mediocre fantasy than read about a wealthy hipster in Brooklyn trying to authentically live the literary lifestyle.

Have you read any of the books? They aren't perfect but if that is you criticism you clearly haven't. The variation in tone and language is pretty easy to see. Even in the first book you want to tell me the cynic words of the soldiers and Kruppes sound even remotely the same? I mean especially the first book is very flawed but definitely not in that category.
