Trying to re-learn Spanish. I took a few years in college nearly a decade ago, so I guess I'm just a little past beginner.
Any good books or stories to read in Spanish that aren't too hard? People have suggested I just read translated Harry Potter and stuff but that seems boring.
Platero y yo
Pedro y el capitan
Borges is not that hard to read

Don fucking Quichotte. I read it in French and I loved it, idk your Spanish level (pretty hard), but it's a masterpiece and a very smart book.

Does anyone know a good, unabridged version of Platero y Yo? Every time I look I only seem to find copies that are abridged or are filled with grammar exercises.

That is strange, I found Don Quijote a million times easier to read than Borges. Maybe I am just not one for non linear story telling.
Carlos Fuentes - Aura
Horacio Quiroga has lots of good short stories.
Ernesto Sabato short stories

Is Cortazar fairly easy to read in Spanish? I'm in a similar situation as op.
