Bloodborne's gameplay and balancing seems so tighter to me. In BB every weapon feels unique (with the exception of very few weapon sets like the Saw Cleaver/Saw Spear, which still have subtle differences between each other). Contrasting to DS3, you have a shitload of copy/pasted weapons which often feel the same because their movesets are so similar.
When you think about mobility, you see something similar. Bloodborne has only one quickstep/roll speed, which could be seen as a "casual simplification", while DS3 has fat roll/quick roll. But the entire game's been balanced around BB's roll speed, which makes the game feel so much better when you're perfectly quickstepping a barrage of enemies and projectiles.
It seems to me that BB had a philosophy more like "let's give the players few choices, but all options are meaningful and viable" while DS3 goes towards "let's give them as many options as we can despite most of them being shit."
And I haven't even mentioned BB's art and environment design.
