I mean, I did grow my potatoes in a flower pot for 3 years. Meant that we got a baby potato harvest every 7 to 12 weeks, and all it took was planting what few we didn't eat. Cut them into quarters and you get 4 plants from one potato.

ok that is not how nutrition works. Russet potatoes have roughly 1 kcal per gram (skin included). If your tdee is 2000 kcal then if you eat over 2kg of potato in a day and nothing else you *will* gain weight. If you didn't gain weight then you didn't eat as much as you're saying.
