I'd say go for the valentines date but keep it lowkey. Make her a small valentine sweet like thing and ask if she'd like to go see a movie or a coffee date or grab a bite to eat. Don't do big romantic gestures like reservations at an expensive place or a dozen roses and a giant plush that she's gonna have to lug around and then feel guilty about not being able to return the romantic gesture. Let it be know you like her, aren't expecting a lot all at once, and are just happy to spend whatever free time she's able to give with her.
