Maybe try green beans. Blanch them for a minute or 2 and then throw them into a wok with some butter and diced up garlic and toss them for a bit and add some salt.
Also, if you like weeb cooking, try looking up goma-ae and shira-ae. I make lots of those kinds of things with broccoli, green beans, spinach, etc.
