Because people think that instead of being something you apply to yourself, sexuality is something that you actually are.
It's why people say that I'm "gay but in denial" even though I am a gold star bisexual. They really don't understand that I applied the "bisexual" label to myself. To them, I have a real sexuality and a perceived sexuality that are either different or the same. That's not the case!
Your sexuality is whatever you define it as. If you find vaginas gross and are a man, you are probably gay instead of straight or bi - but if you like tits enough to find women attractive, you can call yourself bi if you want. I don't really like when people use bi to mean gay in hiding, since it makes it worse for people who want to identify as bisexual, but it's their choice.
