I love dogs, had dogs growing up, enjoy them a lot, but they are massive security risks. Especially pitbulls and such. They are killers.
What are the best solutions, other than guns, for defending against dogs? Does human pepper spray work on dogs or should I get special dog pepper spray? I wear steel toed boots so I think a kick would really mess a dog up. Are knives useful?

Never turn your back and run, always maintain a defense posture at a aggressive dog. If he charges you, maintain posture and prepare for the fight.
Protect your vitals, a dog bite is only serious if it penetrates an artery.
Fight by kicking, but insure you do not lose balance, do it swiftly and hard, aim for the underside of the dog.
Try your best to gain control of the dog, use your weight to get on top of the dog. Once you pin you have complete control, as they are very weak to throwing you off of them. Once in this position a knife would be an easy solution to ending the threat by slicing the throat or if long enough blade putting it through the rib cage to the heart.
Regular OC spray will work fine.
I've been charged by a dog once while walking my smaller dog. One swift kick to the rib area cause the dog much pain and it ran off.

A fixed blade knife is effective. You'll probably get chewed up a bit, but a good stab to the neck will take any dog out. Remember to jab the knife into the middle of the neck and punch it forward, or pull it back if the dog is on top of you. Don't try and get fancy with it.

Dug through my fence into my backyard while I was at work, but it was too stupid to get back out. I went back to let it out of the gate, but it immediately rushed me. I got a bat out of my garage, went back to the gate, opened it, and when it came back at me a second time I bashed him in the head as hard as I could twice. One blow to the left side of the head, and the other just above its left eye. It's eye actually popped out a bit after the second hit which is how I know it lost that eye at least.
I still have the bat. It's an old 34" Louisville slugger that belonged to my dad. Great for beating things. I also use it to kill moles my dog digs up.

I'm right handed, I have no idea where the dog was from, I hadn't seen it before. After I hit it, it ran a bit, stopped and looked back at me, but I yelled at it and shook the bat a bit and it ran and kept running. No idea what became of it afterwards.
It had a collar though, so it must have belonged to someone. I've got neighbors relatively close, but I don't live in a very built up area. No neighbors saw it, or if they did, they never said anything about it.

My friend's dog was attacked by a pitbull. It latched on to it's neck and took 15 minutes of kicking to dislodge it. Kicking it in the balls repeatedly finally did the trick. Fortunately, my friend's dog had a thick neck, so he just played defense until it was over.

Spray will work, supposedly its more effective on dogs and certain animals as they have more sensitive noses. I wouldn't trust something marketed as dog spray, because like bear spray its probably less potent.
Don't turn your back and don't run unless you have a good distance and can make it over a fence or up a high enough tree real quick. Face it, yell at it (don't waste too much breath) and be aggressive. Dogs are very good at reading body language, this is how they communicate. If they feel they have the upper hand they'll fight more fearlessly, and they're already pretty fucking fearless. Kick the shit out of it, use your legs to maintain distance. Don't let it lock onto you, if it does lock onto a limb go in for the kill. Its a grappling game from here, at all times its of utmost importance to protect your fucking neck and head/face. You want to get on top of it, use your weight, dogs arms/legs are weak as shit (I mean they can jump but certainly not hold a human up like a horse). Get on that fuckers back and immediately rip its eyes to shreds. This must be your first move once you're close enough to do it, its hella deterrent and the dog won't be able to see you if it does get back in control.
Once you pop its eyes like grapes you break its legs, this is second most important because again if it regains control its less effective in its future attacks if it can even move at all. Grab the front legs and pull back like you're arresting him, snap the shit out of its bones in any direction they aren't supposed to go. Don't let that fags crying deter you, it committed itself to killing you and you must do the same or face the consequences of showing mercy to a merciless beast.

I use my SLR. Killed my neighbors pits in July because he didn't take my warnings seriously. He never locked his dogs up and had no fence so they would run free if they wanted and once in a while they did. A few times my kids were out when the dog was loose but they managed to get inside. I told him a few times and them one day I was sitting there watching the news and I heard screaming and see my daughter sprinting to the house and knew immediately it was the neighbors dogs. Rifle was in the kitchen so as soon as she made it to the deck I had rounds going off towards the dogs. I shot them both and the neighbor called the sheriff, which made the neighbor clean his dogs from my property. Fuck dogs and their retarded owners, carry all the time. I don't think I would want any less than a gun.

Now it's pinned down, no doubt struggling, with bleeding eyes and broken front legs, you go for its weakness. Like humans they're weakest point is the neck and head. If you have a knife, use it. If you have only your hands, pick its head up and slam it into the ground using your weight but maintaining control. This won't be as effective on grass or dirt. You'll have to struggle with breaking its neck and I don't know how hard that is on a dog, its super easy on a human though trust me. If the thing seems fucked up and tired enough, and its legs are sufficiently mangled, you can try to run from there. Check yourself for bleeding and assess your level of consciousness. You should be calling for help about as much as your breath allows, save it for the valsalva maneuver which makes your movements twice as strong (this is why dogs growl and weightlifters grunt).
That's just one method, but believe me it's pretty ideal considering you're able to get on its back and maintain control without getting bit. Never let the fucker get close to your neck or head, you'll be overwhelmed in seconds and unable to continue. If the fucker can jump that high you'd best offer your arm, take it to the ground and push toward its bite, they tend to release the bite a bit as a reflex. If you end up on top and it rolls onto its back choke it, if you can't maintain control (its still able to bite you) go all in and shove your arm as far down its throat as possible until it suffocates. You can use your dick too if its big enough.

Obviously avoidance is a far better option. Don't confuse this with running because running IS NOT. Some tiny ass dogs can outrun humans, shit Olympic sprinters go about as fast as the average housecat. We bank on tools, intellect, and endurance to some extent. Obviously if you have the right tools (gun, spray) you're fine. If you don't, quick thinking is your best friend. Make a quick getaway, know it's weaknesses and exploit them, call for help, throw dirt in its eyes, etc.
One thing about dogs and this goes back to the reading of body language. They communicate like this. If you seem like a threat they'll treat you like one. If you posture or act aggressive (in sound as well) they'll think you're a threat. This is why they hate black people, they always act brash and aggressive with quick movements and shit.
Working in security for apt. complexes I've come across a lot of irresponsible retards who think its okay to let their shitbulls run around freely. When a piece of shitbull comes running up to me if I stop and posture the dogs sees it as a challenge, if I act scared it sees me as a beta it can slap around. If I act calm and normal, even friendly by whistling or talking in a calm mid pitch tone it'll just come up to me and sniff me then run away. This is their language, if I step back like I'm going to kick it in the face its like some guy coming up to me to say hi and I yell HEY FUCK YOU ASSHOLE. Only with dogs they'll fight you for this. They're animals, like niggers. Around them never relax but know when to be assertive and even vicious if need be.

Seriously you're probably twice as heavy, you've got much larger range of motion on all your limbs, you have hands to grab and (probably) have shoes on to kick with. All you have to do is keep it away from your neck, which is easy as long as you don't lose your balance and let it get on top of you. Keep up against a wall if you can.
You're going to get injured but the average pit bull vs. adult man should be no contest. It's a weight and strength mismatch on the scale of man with knife vs. grizzly bear or silverback gorilla. Any kind of full force hit is going to do serious fucking damage. Getting on top of the dog, or getting any sort of blunt instrument like a stone or brick, and any hit is going to be compound fractures or death outright for the dog.
The process of domestication has left dogs with little appreciation for their own mortality and lack any real sense of self-preservation. Just because a dog might attack aggressively doesn't mean it has any sort of real advantage over a human in the fight. It has teeth and it can outrun you, that's it. The majority of dog attack fatalities either young children, or the elderly for a reason.
Being scared of pit bulls is gun-grabber tier paranoid retardation. Of course multiple dogs, or larger breeds of dogs are different situations.

85lb dog vs. 180-200lb human
human has:

-weight
-reach
-greater range of motion
-can grab
-kick/punch
-use weapons
pit bull has:
-teeth

If you think a dog is going to have any fight left in it after taking a boot to the ribcage, or being picked up and slammed onto the ground, or being hit in the head with a rock, it is you who is fucking delusional. A pit bull is neither large, nor heavy. It's aggression doesn't match its actual ability to kill you.
The vast majority of single dog attack victims are children, and after that, people older than 50. Try to find a case of a 18-40 year old male of average height and weight being attacked and killed by a single pit bull. Nearly every victim in that age range is either a woman, or was attacked by multiple dogs.
For something as small as a pit bull to kill you, you have to be not fighting back, at all.
