I wouldn't have built an AR-15 if I knew the end result was this much god damned tinkering.
Some people get by with super cheap ARs that work, some guys put together super expensive ones that work.
I ended up near the latter with one that doesn't work. Then I spent a few months diagnosing it and getting it right to finally have it shoot what I wanted without any jams.
I feel like a fucking recovering alcoholic when I say, 1 year jam free. Since I got it shootable 2 years ago.

What was the problem?
I thought I was gonna completely blow building mine but I managed to get it done with only an oil filter strap and a hammer. (Albeit CRAZILY overgassed, but I just tweaked the gas block slightly to cover up more of the gas port. It ran perfect afterwards.)

The gas block was misaligned, thanks to the nice reputable gunsmith in my area that everyone suggested I go see instead of doing it myself.
It was stovepiping even after.
Really saying a year is kind of hyperbole, I couldn't really afford to go shooting so it just sorta sat in my closet defunct.
Got an upgraded ejector spring and a proper buffer and buffer spring and it has ran fine ever since.

I'd probably choose something in a larger caliber (7.62x51, 7.62x54r, .30-06, etc.) for personal use since my threat model includes bears, mountain lions, and drunken marines in plate carriers (yay living near a base). Intermediate cartridges aren't killy enough.

Well, I guess an hk33, more dependable and accurate than a mini 14, and with a simple claw mount, allows me to mount optics.
Or an AUG, the oldest bullpup still being praised for its...well, everything. For a bullpup, many people say the trigger is great. And of course with an integrated foregrip and (depending on model) optic, I certainly couldn't complain. Also the barrel change system is pretty damn neat.
As for op, I can't argue against your point. It's a great rifle across the board, and has a gigantic aftermarket, much like glocks. Those are the main reasons I often reccomend either of these guns for anyone shopping around for a new gun, since they're borderline musts in a collection. On top of that, caliber changes only require replacing the mag and upper, which is probably my favorite system since your optic likely stays with your upper, meaning you don't have to re-zero it every time you switch calibers. (Unless it's an eotech huehuehuehue)
All of the above (besides discussing other platforms) are reasons I'm looking to build an ar pistol soon.

The problem with the AR and AK is that they are both such great rifles that they've drowned out the competition when it comes to 5.56 firearms.
Everything else is a bullpup or something special snowflake like the Sig rifles.
SCAR is all that's left in intermediate calibers and because of that if the SCAR was not an option I'd pick a FAL.
