With as many companies building custom ARs and how old the technology is, why hasn't anyone tried to change the very internal mechanisms it functions on? Like, why are we still using the AR 15 platform with direct impingement instead of trying to evolve and move on to a firing platform similar to the SCAR or even an AK(as silly as that sounds at first)

There are plenty piston systems. They aren't popular because every company that makes a design patents it (which means its proprietary and can't mix parts with other manufacturers), and they offer pretty much no benefit over DI systems.
It gives a very tiny advantage while costing what makes the AR special in the first place.

Parts compatibility, resistance to change, and pistons aren't remotely beneficial in and of themselves beyond being self regulating to an extent. The only things that truly suck about DI are the necessity of the receiver extension and the fact that it does weird things if the gas tube is half full of water. That said, there are TONS of piston systems out there for ARs and the only one I can think of that is remotely worth it was the LR-300/TTR because it moved the mainspring forward and gave you the option of a folding stock.
