Latest defenses involved metal stakes placed in the ground at an angle as well as the fence itself. They were stopped momentarily but continued through the fence. I do believe it did quite some damage.

Drop some caltrops and boards with nails. Disguise them, paint green/brown and cover with leaves and dirt. Let them ruin all their tires and probably abandon the truck there while trying to figure out how to get it fixed. Light the thing on fire that night. Call the police and say someone abandoned a truck on your land and lit it on fire. If you can et descriptions say you saw them do it. Police come and take a report, you press charges for trespassing, property, damage, wreckless driving and arson on your property. They'll likely put in an insurance claim before realize they have a warrant out for their arrest, they get knocked for insurance fraud too. If they attempt to make contact with you shoot them and claim the whole thing was an attempt to intimidate you, that they've been harassing you for a while and finally came to kill you.

Depending on how super serious this is I would look into building something like the coastal defenses on Normandy. Those log ramp things designed to stop the watercraft.
Put one of those with a taller log at the end, so the vehicle would throw itself up the ramp bit then hit the taller log and be able to go no further. Drive in some large and long nails amd then if the truck was able to back off it would become stuck on the nails. It would definitely stop the truck but not be a booby trap, just a fortification.
