Is there a reason beyond just looks? And I don't mean purely a pistol grip. I mean, a stock you can jam into your shoulder for stability AND a pistol grip.

Despite whatever you think you know about using different shells for different applications, it is a categorical fact that shotguns are limited in engagement range, ammunition capacity, and the ability to use a single type of shell across the board. Just because a 3" 12 gauge ESC slug can semi-effectively be used to engage targets beyond 50 meters, does not mean that will be in the weapon when you need it. I takes time to transition from 2 3/4" 00 Buck to a different shell in any situation, so again, speed is limited in shotguns. Keeping any single type of shell in the weapon at one time will invariably limit your capability in some other facet. Capacity is low, so of course there is no reason to believe that you could use a shotgun for covering fire in a military situation.

The best weapons for defensive combat are incidentally the best weapons for offensive combat in MOUT. There is a reason that police forces, which used 12 gauge shotguns for over a century, now use magazine fed rifles. Cheapness really has nothing to do with it either, especially because the mean price of the firearms you are arguing against is consistently much higher than the firearms you're arguing for.

Shotguns are good up to 75yds and longer with a good choke and alright ammo, but for modern military infantry combat, it's hopelessly out of place.
Shotguns, for military purposes, have been pushed a bit to the wayside, like the submachinegun. Way more practical in civilian use than military use (though breaching is important).
