Yeah .270 can kill elk, but having them die 20-30 minutes later after they run a few miles is not ideal. I know this shit from experience.
I hunted with a guy 2 years ago who put a perfect front shoulder shot on a 370" bull, and the bullet fragmented and ricocheted when it hit, which didn't break the bone. It threw a bunch of fragments into some vital organs but the elk ran about 4 miles and we didn't find it for 3 days (after the meat was spoiled).
270 just doesn't have enough energy to drop one on the spot unless you get a perfect heart or head shot.
The minimum I would shoot would be 7mm mag, with .300 mag or .338 mag being ideal. And even with these larger magnum calibers I've never seen a bullet punch all the way through.. Elk are fucking tanks.

Energy is not really a factor. Penetration, wound vector, weight retention, placement. These are factors. My buddy's wife has killed 7 with hers, 5 of which dropped right there. The other two ran less than a mile.

Wouldn't that be caused more by bullet selection than caliber? I could be wrong but putting more ass behind a relatively similar bullet that fragments prematurely would exacerbate the poor results.

I can hunt 90%+ of any game anywhere in the world with the .300, and it doubles as a long range precision rifle if I put it together right.
The AR-15 fills the entire fighting rifle and home defense category.
And the handgun is for conceal-ability and having a secondary when using either of the long arms. Shotguns aren't that useful in the grand scheme of things.
Ultimately, I'm glad I can own more than three, but if I had to pick just three, and they are they only ones I get for my lifespan, it's those.
What I do have is a Weatherby .300 w/ Zeiss, a Daniel Defense AR, and the P30L. I stopped a little short of perfection on the diminishing returns curve for the rifles, meaning I saved a couple thousand dollars and sacrificed <10% quality.
