Wootz, damascus, and tamahagane are all true steels, and often have performance qualities exceeding, say, 440a. They might not have the edge retention of zdp-189, but they make functional blades.
I'd take carbon steel over aus-8 any day, because I can keep it sharp with a pocket stone, and get it sharper, sandvik 12c27 if I needed something stainless.
