This information is not totally correct.
Grizzly bears: Lay on your stomach, cover the back of your neck, play dead. If a grizzly thinks you're dead, it's not in a hurry to eat you, it would prefer that you rot a bit and gain that spoiled flavor, so it'll drag you somewhere, cover you with leaves, and then go on a walkabout for a few hours/days, giving you a chance to escape (hopefully with most of your skin still on). It'll only do this if it thinks you're dead, of course.
Black bears, however, prefer their meals dead and easy. They aren't going to wait for your meat to spoil. You fight back against those -- let them know you won't be an easy meal.
All bears don't know their size, though. They size themselves up on how their potential prey reacts to them, which leads them to "charge" or stand up. If it's a non-defense issue for the bear, standing still, speaking quietly and softly saying things like "Gooood bear... niiiiiiice bear" while avoiding eye contact, keeping hands at hip level, open and spread, while slowly walking backward and away is the best approach (and don't piss or crap your pants). If they ACTUALLY get within 10 feet of you when they charge, you take the steps above, for the specific type of bear.
