Series 70 Colt. Blued for $825ish and stainless steel for $875.

Any of the Colt series 70 models can be had in your choice of finish for $850ish.
Gold Cup National Match can be had for $1050ish.
Unless you like a specific design of some xyz Springfield or STI honestly I'd just stick with a Colt. If they still offer their super high gloss Royal blue through the custom shop that might be worth paying extra for since they are total sex.

Their prices on the 70 Series have come down and are pretty decent for what you get. Also as superficial as it is, it's nice to have a 1911 with a pony on it.
